What I Ate, August 15th
No, I haven’t forgotten this project. I was just back in a rut of eating junk.
Tonight I sauteed half an onion in olive oil, then added a can of tomato sauce, a can of diced tomatoes, a bunch of chopped green olives, a can of black beans (drained and rinsed), and a splash of balsamic vinegar. I cooked whole wheat rotini and then put it into the sauce to pick up a bit of the flavor before serving. I had it with a salad and a glass of wine. Good stuff.
